Food as a cultural heritage consumption in Mexico is by no means an ?innocent act? to which academic reflection should turn a blind eye, especially when it involves a breach of the ethical limits of animal welfare, as is the pain inflicted on sentient beings equipped with a central nervous system (Dawkins, 2006). The inflicting of pain on many species of animals, like the young goat, is part and parcel of the growth control necessary to maintain culinary standards. The human cruelty involved in this kind of suffering reaches a peak at the time of slaughter (Rinfret, 2009), a shared responsibility in which all players - including tourists - have their part. © 2018 selection and editorial matter, Carol Kline; individual chapters, the contributors.
