Resumen:

Paratuberculosis or Johne's disease is an infectious disease caused by Mycobacterium avium subsp. paratuberculosis (MAP); it mainly affects domestic and wild ruminants and is characterized by a long incubation period which causes a severe granulomatous enteritis. Recent studies have highlighted that paratuberculosis represents not only an animal health risk, but the presence of MAP in the food chain constitutes an emerging threat also to humans; in fact, this bacterium has been related to the development of many human diseases such as Crohn's disease, sarcoidosis, Blau syndrome, diabetes type 1, Hashimoto's thyroiditis and multiple sclerosis. Ingestion of contaminated food, especially milk and cheese, is the main route of human exposure to MAP; in this respect, few studies have investigated the presence of Mycobacterium avium paratuberculosis in cheese produced from bovine and small ruminant milk.
