Resumen:

Chontaduro (B. gasipaes Kunth) or peach palm is a starchy fruit mostly consumed from Costa Rica to Brazil, mainly used as a popular snack. It is considered a sustainable source of bioactive compounds as the palms can be continuously productive after several years. The fruit has been recognized as an important source of nutrients, since the pulp contains all essential amino acids, mainly lysine, methionine, cysteine, threonine, and tryptophan. Moreover, it is rich in dietary fiber and antioxidant compounds suggesting an antioxidant benefit derived from its consumption. Chontaduro pulp is a rich source of total carotenoids, even higher than other Amazonian fruits, indicating its feasibility to solve the long-lasting vitamin A deficiencies in developing countries. As some of these carotenoids exhibit strong antioxidant properties, Chontaduro flour can be used to improve the antioxidant characteristics of food ingredients or chontaduro-containing products. The antioxidant potential is supported in the high bioaccessibility of carotenoids when extracted using oil matrices. Despite these properties, only a few in vitro and in vivo studies have been carried out. There is a lack of studies exploring the molecular mechanisms associated with the observed beneficial effects. Hence, this chapter covers the main beneficial effects linked to several bioactive compounds from chontaduro in the last 15 years. © 2023 John Wiley & Sons, Inc.
