Resumen:

In recent decades, natural food additives (NFAs) have gained more interest from consumers and food manufacturers since the public is more interested in what they eat and prefers natural additives to synthetic ones. Although NFAs were considered safe in the past, the lifestyle, diets, and food products are constantly changing; therefore, the toxicity of NFAs must be evaluated periodically to ensure food safety. Based on toxicological studies for food additives (FAs), indexes such as the acceptable daily intake (ADI) are obtained, indicating the amount of a food additive consumed per day without harmful effects on health. In addition, some NFAs have an ADI not specified and are considered safe. Nevertheless, the evidence of toxicity can be inconsistent, and in the case of NFAs, the lack of an official definition complicates the establishment of guidelines or recommendations for safe doses, leading to misinterpretation and confusion. This chapter summarises the toxicological aspects of some suitable NFAs from the different groups, such as antioxidants, colourants, antimicrobials, and sweeteners. In addition, we discuss some possible future scenarios for these NFAs. © The Editor(s) (if applicable) and The Author(s), under exclusive license to Springer Nature Switzerland AG 2023.
