Resumen:

Introduction: Phycocyanin (PC) is a biliprotein and an accessory dye of photosystem II in some algae, such as Spirulina. It has various properties of interest for the food, biomedical, pharmaceutical, and chemical industries. Its main properties are antioxidant, anti-inflammatory, anticancer, anti-platelet, renoprotective, and neuroprotective, among others. This chapter aims to show PC?s main characteristics and properties based on its antioxidant activity, mainly in vivo models. Methodology: The bibliographic review is derived from scientific articles published on Pubmed. The information search was carried out with the keywords: phycocyanin, antioxidant, and in vivo. Articles were selected mainly from the last 10 years. Results and discussion: PC is an intense blue protein with antioxidant activity against various reactive oxygen species. PC has been associated with a protective effect against kidney, neurological, endothelial, and platelet damage, among other properties shown in this chapter. These properties allow PC use in the food industry in sweets, smoothies, and ice cream, among other nutraceutical products. Conclusions: PC is an antioxidant nutraceutical with several biological properties demonstrated in animal studies and clinical trials, suggesting its possible use in treating several human diseases. © 2025 Elsevier Inc.
