© 2026 by Apple Academic Press, Inc.In current times, the changing and accelerated pace of life allows little time to stop and think about the origin of food; this is complemented by the production and distribution capacity of the food industry, which is why some of the foods that are part of the biocultural heritage of Mexico are becoming invisible or used less and less, such is the case of Cotija Cheese Region of origin. Therefore, the objective of this chapter is to reflect on the impact that gastronomy has from culinary transformations as a way to revitalize said foods. Through a qualitative and exploratory approach, the relationship between gastronomy, artisanal production, and the market is addressed, highlighting the importance of maintaining links and understanding the associated processes to which a particular way of life belongs. Cotija cheese, with more than four centuries of culinary tradition, under distinctive know-how, stands as a heritage that currently faces challenges derived from industrialization and the growing disconnection between the consumer and the producer. This reflection not only examines the lack of bonds that has led to the separation between artisanal producers and consumers, but also analyzes possible patterns that explain this distancing. This work proposes strategies to revitalize this and other heritage, from the development of innovative recipes to the creation of virtual communities that promote awareness about the origin and importance of local foods, given the digital tools available. Gastronomy is presented as a critical and counter-current field, capable of strengthening the social fabric and to value the biocultural food heritage.
