Resumen:

© 2026 John Wiley & Sons, Inc.Enzymes are the main catalysts that occur in nature for biological processes. In terms of industrial applications, enzymes are already employed for numerous processes, such as hydrolysis, esterification, and glycosylation. The fast progress in biotechnology, particularly in enzymatic synthesis, has developed different ways to overcome the main disadvantages of enzymes in industry. Even higher enzyme improvements can be achieved by molecular biology methods, which allow enzymes not only to enhance their productivity and efficiency, but also to do so in a more sustainable manner. Even higher enzyme improvements can be achieved by molecular biology methods, which allow enzymes not only to enhance their productivity and efficiency, but also to do so in a more sustainable manner. Industrial enzymes are produced by cells in culture media, which is generally aqueous media. Oxidoreductases catalyze oxidation-reduction reactions, which imply the transfer of electrons, hydrogen atoms, or oxygen atoms.
