© 2026 Elsevier Inc. All rights reserved.There is a wide range of food nutraceuticals available with demonstrated prebiotic properties, particularly complex sugars and oligosaccharides. Most of these compounds are produced using traditional and modern biotechnological strategies, which include simple extraction procedures from plants, microbial fermentation technologies, or biocatalytic processes. In this chapter, we analyze the case of levan-fructo-oligosaccharides (levan-FOS), which, we propose, have similarities with inulin-fructo-oligosaccharides (inulin-FOS), the most consolidated prebiotics, but are currently unavailable as nutraceutical ingredients. Despite this situation, we discuss here how for centuries levan-FOS has been part of the human diet of many cultures. We therefore propose that their role as healthy molecules has been historically demonstrated. Recent evidence of these benefits is discussed. We also review here the different options for levan-FOS production, whether from natural or genetically modified plants or microorganisms, microbial cultures, and enzymatic synthesis processes either directly from sucrose or associated with levan production and hydrolysis reactions.
